Pasta Broccoli Bake (8 Points+)

4oz Ronzoni Smart Taste Penne Rigata
2 cups broccoli florets, frozen
olive oil spray
2 cloves garlic, crushed
1 can seasoned diced tomatoes
1/2 can tomato paste
1/2 cup 2% shredded mozzarella

Cook pasta according to package directions.  While pasta is cooking steam broccoli until tender.  Coat large skillet with olive oil spray and saute garlic.  Add canned tomatoes and tomato paste.  Cook tomatoes until heated through.  

When pasta, broccoli, and tomatoes are finished cooking, combine in glass baking dish.  Top with mozzarella and place under broiler in oven for a few minutes.  Keep a close eye on the cheese so it does not burn. 

Makes 2 servings at $1.70 and 8 Points+ per serving.  To reduce points value, substitute fat free shredded cheese.


**Broccoli was purchased from Sam's Club- 4lb. bag for $4.98.  We use organic where we can and this recipe includes organic broccoli, tomatoes and tomato paste.
