Here is the meal plan for week 2 of our Whole30. In lieu of re-posting some of these recipes, I put links to the recipes inside and below the plan. A note on Chipotle, according to several sites (include their own) the only Whole30 compliant meat is carnitas (it is the only meat not cooked in soybean oil). Also, the fajita veggies are cooked in soybean oil and are not Whole30 compliant. Otherwise, my salad was awesome topped with guacamole!

Paleo Meatloaf--this recipe is delicious and uses a TON of meat. I broke up her recipe into 18 servings by using 24 muffin cups and 2 half filled loaf pans (each containing ~3 servings).
Carbonara Egg Muffins--I doubled the recipe and, instead of muffin cups, I placed the entire batch into one large casserole dish. I cut the casserole into 8 servings so that each slice would yield enough protein and veggies for a meal.
