Wholly Guacamole Chicken Salad


On Whole30, store bought mayo and miracle whip are off limits. I was going to make the approved version of mayonnaise, but when I found out the egg needed to sit out on the counter for 4 hours, and it was already 8pm, this recipe was formulated. Basically, the recipe is chicken, guacamole, and veggies. Totes awesome. 

  • 2 small (5 oz) cans of chicken (check labels for food starch, etc.)
  • 4 oz Wholly Guacamole or avocado
  • 2-4 ribs celery, chopped
  • 1/4 cup cilantro, chopped (optional)

Combine all the ingredients in a bowl and enjoy! This recipe serves 2 and costs ~$1.60 per serving.
