The idea behind this recipe is to have a really fast meal that tastes like an enchilada. I am not a huge proponent of canned meat but this is a quick and simple dish that tastes pretty close to the real deal. Jeremy made, from scratch, the tortillas for this meal. But, at a whopping 4 Points+ per tortilla, the meal became Points+ laden quickly.
1 can chicken
1/4 c. enchilada sauce (I used a green sauce)
tortillas and cheese are optional
Drain chicken and combine in a microwave safe bowl with the enchilada sauce. Microwave for 45 seconds, or until hot. Serve with a tortilla and sprinkled with fat free shredded cheese, if desired (will affect Points+ value depending on tortilla used and amount of cheese).
This makes 2 servings at 2 Points+ for less than $.75 per serving.
