For the Baked Fish Packets:
On one half of a large (12" by 12") square of foil, pile up lots of veggies and drizzle with olive oil. Place fish filet on the top of veggies, season with salt, pepper, and herbs. Fold the foil to create a packet. Bake on 400 degrees until fish is cooked through.
